Spices to fall in love with…
Two bold products from Lafayette Spices to warm your guest’s palates this Valentine’s Day. Kampot Long Red Peppercorns and Crazy Salt are intense, flavorful, and unforgettable additions to your V-Day menu.
Kampot Long Red Peppercorns
Kampot Long Red Peppercorns are guaranteed to spice up your love life and your dinner plate! They’re probably one of the spiciest peppers we have! They hail from Kampot – a city in Southern Cambodia known for its pepper plantations and salt fields. The red peppercorns consist of the ripe fruit of the Piper nigrum that have been dried in a way to retain the red color – it has been left on the vine longer than any other pepper. The flavor of this beautiful peppercorn is deep and complex. Notes of warm spices like cinnamon, clove, and nutmeg mingle around an intense heat. Use with other bold flavors like lamb, beef, smoked meats, and root vegetables.
Crazy Salt
We’re crazy in love with this flavor bomb of a seasoning! This intensely flavored (and colored) salt is from Guerande France. It’s collected from the bottom of salt ponds before being seasoned with pink and black peppercorns, thyme, chili, cumin, and coriander. It’s got toothsome crunchy crystals, and a flavor that just keeps on going. This is a perfect salt for seasoning raw meats, fish, and vegetables prior to cooking. It can be used as a fantastic finishing salt also – use it to finish sliced meats and bbq, rim a cocktail glass, or even finish a plate of French fries or potato chips. The possibilities are endless!
Microgreens that will melt your heart…
Microgreens should be on your menu this Valentine’s Day – but not just any old micros. Give your guests the most beautiful, flavor driven microgreens on the planet. Micro Beet Bulls Blood is ruby red and packed with intense beetroot nuances. Micro Shiso Purple has deep shades of red, fuchsia, and purple with complex notes of cinnamon, cumin, and warm spices.
Beet Bulls Blood
Nothing says love quite like blood, right? This stunning heirloom beet variety was one of the first microgreen varieties ever grown and has been used in higher-end restaurants since the late 1980’s. Its deep purplish and red leaves bring a bright color to the plate as well as a nutty, earthy, and beet-like flavor. This would make a beautiful topper on a risotto of roasted vegetables, complete with a sprinkling of toasted pumpkin seeds and a handful of grated parmesan.
Micro Shiso Purple
Even Cupid has his eye on our magnificent Micro Shiso Purple! Its complex flavor has notes of cinnamon, cumin and ginger. Perfect for sweet, savory and even bar applications! Shiso Purple is extensively used throughout Northeast Asia and commonly paired with fish. It is also used as a natural culinary color agent in Japan. The adult leaves (also available) have antiseptic properties that counteract parasites found in sushi and raw fish. . These flavors work well with fall and winter ingredients like duck, pumpkin and squash, and roasted apple. We’d pair it with a yogurt panna cotta, oat crumble, and fresh slices of ripe persimmon.
